while most cafes are designed for speed and efficiency many specialty cafes are incorporating ways to deepen customer’s experiences by slowing them down. the photos above are two different slow bars, one at intelligentsia and the other at four barrel. they both use scales and hand poured brewing systems to create delicious beverages to order. the baristas are well informed to ensure that you are given a coffee that suits your tastes but also stretches your expectations of what a coffee should taste like. this is also a way to connect coffee drinkers to coffee growers because it allows you to ask questions about the coffee’s origins and how it reached your cup. it treats coffee like the experience it is not just a commodity.
