popsicles are my favorite treat in the summer. when i found this recipe to combine coffee and popsicles i knew it had to happen. it called for espresso but my stove top espresso pot is still in storage. so i tweaked the recipe and made them anyway. i hope they help you cool off in this heat.
3/4 cup half and half
1/2 cup sweetened condensed milk
1 1/2 cups double strength pour over brewed coffee
combine the half and half and 1/4 cup of condensed milk. pour into molds about 1/4 full and freeze until almost solid about an hour. Meanwhile, in a bowl, whisk together the coffee, and the remaining 1/4 cup of condensed milk, refrigerate until cold. divide the mixture among the molds and add the Popsicle sticks. freeze until solid about 8 hours.
